Assemblage of Merlot, Syrah.
The Pinot grape, which was planted in 2016, was not be harvested for 3 years. We waited for the 2019 vintage for a vinegar coming from this grape variety.
In the meantime, the blend we are presenting comes from a very demanding selection of red wines from the coasts of Biscay.
This red wine vinegar is very aromatic and of a surprising, slightly tiled colour, due to a maturing process of a few years in oak barrels. The nose is elegant, with aromas of black fruits like blackberry and very sweet spices with vanilla and toasted notes gained through ageing. In the mouth, the fruity dominant characteristic grows with the brightness of the red tints and all the complex structure of this vinegar reveals itself to the greatest delight of gourmets.
Red wine vinegar is versatile par excellence and will accompany salads, raw vegetables, meats, fish and even desserts. It is a true taste enhancer. It will give your marinades a surprising touch and deglazing with this blended red vinegar will take your sauce making to another level.
Its elegance and finesse will not overwhelm the dish it accompanies.
