The acacia cask is characterized by a softer wooding. It brings freshness, a complex floral touch in the nose. The vinegar will gain elegance and finesse with notes of citrus (cedar, yuzu – a lemon coming from Japan), white flowers and honey. Its slightly waxy texture is characteristic of balsamic vinegars but does not hide the aromas of fresh fruit, plants and flowers that prevail.
With its citrus and floral notes, it evokes summer.
It will go wonderfully with fish and shellfish.
