The acacia cask is characterized by a softer wooding. It brings freshness, a complex floral side to the nose. The vinegar will gain elegance and finesse with notes of citrus (cedar, yuzu – this lemon that comes from Japan), white flowers and honey. Its slightly waxy texture is characteristic of balsamic but does not hide the aromas of fresh fruit, plants and flowers that remain dominant.
With its citrus and floral notes, it evokes summer.
It will go wonderfully with fish and shellfish.
